If you only dictate your own notes, you are not recording anyone else. If you record a conversation with a client, you let the client know. In practice one sentence does it: "I'm recording this conversation so we both have a report."
With Notuly it is. All processing runs on Dutch servers in Amsterdam; your data never leaves the EU. Your reports are not used as training data. A data processing agreement (GDPR Article 28) is available on Team and above.
